
Fennel and Butter Bean Soup
Simple and smooth
Ingredients
- 2 diced brown onions
- 1 chopped fennel
- 2 cups vegetable stock
- 1 can of butter beans
- Salt and pepper
Steps
- Saute the onions with 4 tablespoons of olive oil. Once golden add in the fennel. Mix for a few minutes.
- Add in the butter beans and stock. Let it cook and soften the fennel for 25 minutes.
- Then use a stick blender and blend the soup until smooth. Add salt and pepper to taste.
