Fennel and Butter Bean Soup

Simple and smooth

Ingredients

  • 2 diced brown onions
  • 1 chopped fennel
  • 2 cups vegetable stock
  • 1 can of butter beans
  • Salt and pepper

Steps

  1. Saute the onions with 4 tablespoons of olive oil. Once golden add in the fennel. Mix for a few minutes.
  2. Add in the butter beans and stock. Let it cook and soften the fennel for 25 minutes.
  3. Then use a stick blender and blend the soup until smooth. Add salt and pepper to taste.
