Ginger Chicken Satay Skewers

Grilled chicken skewers marinated in a zesty peanut, ginger, and soy sauce blend.

Ingredients

  • 1 kg chicken tenderloins
  • 4 tbsp crunchy peanut butter
  • 2 tbsp maple syrup
  • 4 tbsp soy sauce
  • 1 tbsp lemon juice
  • 1 tbsp fish sauce
  • 1 tbsp grated fresh ginger
  • 1/2 tbsp lemon zest
  • 1/2 cup boiled water
  • bamboo skewers

Steps

  1. In a mixing bowl add all the above ingredients (not the skewers). Mix well. Let it marinate in the fridge for at-least an hour (marinating overnight would be ideal).
  2. Place 1 - 2 tenderloins on a skewer then place the skewers on a lined baking dish in the oven. Use the grilling and fan force setting on your oven (200 degrees celsius). 6 minutes each side. I serve with sliced cucumbers and coriander (cilantro) on a bed of steamed rice.
