Beyond Basic Meatballs

In a large pot add olive oil and a diced brown onion.
Once onions are golden brown add passata sauce, water/stock, salt & pepper and oregano. The key is to cook this on low for an extended period, letting the flavours infuse and develop.
In a food processor add carrots and peas and pulse until smooth. Add minced beef, cumin and sweet paprika. If you don't have an egg intolerance you can add 2 eggs here too. Blitz until smooth.
With your hands roll the mixture into balls and add to the tomato sauce pot. Place lid on-top and let it simmer on low for 30-40 minutes.
Serve the meatballs with pasta.
