potato & zucchini borekas
- 3 potatoes
- 1 brown onion
- 4 tbsp olive oil
- 1 tbsp ground cumin
- 1 tbsp ground coriander
- 1/2 tbsp ground turmeric
- 1/2 cup frozen peas
- 3 sheets puff pastry
- salt and pepper
- Boil 3 cubed potato (skin). Cook until almost soft.
- In a saucepan add 4 tablespoons of olive oil, 1 diced brown onion, 1 tablespoon of ground cumin, 1 tablespoon of ground coriander and 1/2 tablespoon of ground turmeric. Mix together.
- Once onions start to sweat and become golden add 1 cubed zucchini and 1/2 cup of frozen peas. Mix until the zucchini becomes almost soft. Once potatoes are ready add into saucepan. Give it a good mix and get the flavours fusing together. Add salt and pepper (optional).
- Place the mixture in the puff pastry sheet then roll into logs. Bake for 30 minutes (or until golden brown) at 180 degrees celsius.
Note: I choose to use oil based puff pastry, not butter sheets.
