Chicken Sausage Rolls

  • 1 large brown onion
  • 2 tbsp olive oil
  • 1 cup frozen peas
  • 2 carrots
  • 1/2 cup chopped parsley
  • 1 tbsp ground coriander
  • 500 gm minced chicken
  • 1/4 cup bread crumbs
  • salt and pepper (to taste)
  • 3 sheets puff pastry


  • Pre-heat oven to 200 degrees celsius.
  • Place a small pot on a low heat and add the olive oil, diced onions and salt and pepper (add to taste). Mix intermittently until it is golden brown. Remove from heat and let it cool down.
  • In a food processor add carrots, peas, ground coriander, minced chicken, bread crumbs, caramelised onions and parsley. Once it has become fine and the ingredients have blended together you are ready to place inside the puff pastry sheets.
  • You can make your sausage rolls thick or thin, simply either use half the puff pastry sheets or the entire sheet per log. Once you have rolled your sheets, cut them into your desired size and place on a lined baking tray.
  • Place in oven for 30 minutes or until golden brown.
